Pulled Pork Barbecue Nachos

Whether you’re having people over for the big game or need a quick, weeknight meal, pulled pork barbecue nachos made with Payton’s Barbecue Pulled Pork are the way to go.

Ingredients

1 lb Payton’s Barbecue Pulled Pork®, thawed
¾ cup steamed sweet corn
Tortilla chips (Base the number of tortilla chips on your preferred meat to chip ratio. We suggest a lot of meat and a few chips.)
¼ to ½ onion, diced
½ cup black beans, rinsed and drained
1 ¼ cups shredded cheese (We recommend a Mexican cheese blend or cheddar)
1 jalapeno pepper, sliced (optional)
½ avocado, chopped or sliced
½ bunch of green onions, diced
Sour cream (optional)
Any other nacho toppings you like

Instructions

 

  1.  Preheat oven to 350 degrees F.
  2.  Prepare Payton’s Barbecue Pulled Pork in your microwave or over your stove.
  3.  Line a large baking sheet with parchment paper or aluminum foil. Place an even layer of tortilla chips on the pan. Spread the prepared Payton’s Barbecue Pulled Pork over the tortilla chips. Then, sprinkle diced onion, black beans, and sweet corn over the chips and meat. Cover your creation with shredded cheese. Bake for 10 minutes or until the cheese melts.
  4.  When the nachos are finished, add the jalapeno, avocado, green onions, sour cream, and your other favorite nacho toppings.
