Ingredients
1 16oz Tub Payton’s Barbecue Taco Meat®
1 tbsp olive oil
1 medium onion, diced
1 red bell pepper, diced
1 15oz can black beans
1 15oz can sweet corn
2 garlic cloves, minced
2 tsp oregano (dried)
2 tsp cumin
1 tsp paprika
1/4 tsp chili (optional)
24oz tomato puree passata or crushed tomatoes
4 cups chicken or vegetable broth
Salt and pepper taste

Corn chips
Sour cream
Shredded cheese
Cilantro
Avocado, diced
Instructions

Heat the oil in a large saucepan over high heat. While pan is heating, prepare Payton’s Taco Meat in the microwave according to package instructions.

Cook garlic, and onion, sauté in saucepan until onion becomes translucent (2 minutes), then add the bell pepper and cook for 1 minute until softened.

Add cooked Payton’s Taco Meat to the saucepan and add all other ingredients except salt and pepper.

Bring to boil then turn down heat slightly and allow to simmer rapidly for 3 minutes so the flavors can come together.

Do a taste test, then season with salt and pepper. It is important to season last because different stock brands have different levels of saltiness.

Serve with toppings of choice.
